Masala French Fries

Ingredients:
4 large potatoes, peeled and cut into thin strips
2 tablespoons cornstarch or cornflour
1 teaspoon red chili powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
1 teaspoon amchur (dried mango powder)
1/2 teaspoon turmeric powder
Salt to taste
Oil for deep-frying

Instructions:
In a large bowl, soak the potato strips in cold water for about 30 minutes. This helps to remove excess starch and ensures crispiness.
Drain the water and pat the potato strips dry using a clean kitchen towel or paper towels.
In a separate bowl, combine the cornstarch or cornflour, red chili powder, ground cumin, ground coriander, garam masala, amchur, turmeric powder, and salt. Mix the spices well to create the masala blend.
Toss the dry potato strips in the masala blend, ensuring that they are evenly coated with the spices.
Heat oil in a deep frying pan or a fryer to about 350°F (175°C).
Carefully drop the coated potato strips into the hot oil in batches, avoiding overcrowding. Fry them until they turn golden brown and crispy.
Remove the fries from the oil using a slotted spoon and place them on paper towels to drain any excess oil.
