Infusing the Milk
In a separate pan, boil the whole milk until it's reduced by about a third.
Add sugar to the boiled milk and stir until it dissolves completely.
Adding the Yogurt Culture
Once the milk-sugar mixture is lukewarm, add the yogurt starter culture.
You can use a small amount of plain yogurt as a starter or opt for yogurt culture packets available in stores.

Incubating the Mishti Doi
Pour the milk mixture into earthen pots or containers of your choice.
Cover the pots with lids or clean cloth to allow the fermentation process to occur.

Chilling and Serving
Place the pots in a warm and dark place to ferment for around 6-8 hours.
Once set, refrigerate the pots to chill the Mishti Doi.
