Ingredients:

1 cup poha (flattened rice)
1 medium-sized onion (finely chopped)
1-2 green chilies (finely chopped)
1 medium-sized potato (peeled and diced)
1/4 cup peanuts
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon turmeric powder
8-10 curry leaves
2 tablespoons vegetable oil
Salt (to taste)
Fresh coriander leaves (for garnish)
Lemon wedges (for serving)

Instructions:
Preparation: Rinse the poha in a colander under running water for a few seconds. Be gentle and do not over-soak the poha, as it can become mushy. Once rinsed, let it sit and drain to remove excess water.

Roasting Peanuts: In a pan, dry roast the peanuts on low heat until they turn slightly golden and crunchy. Remove the peanuts from the pan and set them aside.

Sautéing Vegetables: In the same pan, heat the vegetable oil. Add the mustard seeds and cumin seeds. When they start to splutter, add the curry leaves and green chilies. Sauté for a minute.

Adding Potatoes: Add the diced potatoes to the pan and cook them until they become tender. You can cover the pan with a lid to speed up the cooking process.

Seasoning: Once the potatoes are cooked, add turmeric powder and salt. Mix well to ensure the seasoning coats the potatoes evenly.

Adding Poha: Now, add the rinsed and drained poha to the pan. Gently mix everything together until the poha is well combined with the seasoned vegetables. Be careful not to break the poha while mixing.

Cooking: Cover the pan with a lid and let the poha cook on low heat for 2-3 minutes. This will allow the flavors to blend and the poha to become soft.

Garnishing: After a few minutes, turn off the heat. Garnish the poha with the roasted peanuts and fresh coriander leaves.

Serving: Serve the delicious poha hot with a side of lemon wedges. Squeezing lemon juice over the poha enhances its flavors.

Poha makes for a light and nutritious breakfast, and it can be customized with various toppings like sev, grated coconut, or pomegranate seeds. Enjoy this traditional Indian breakfast that is both easy to make and full of flavor!
