Ingredients You'll Need

1 cup sabudana (tapioca pearls)
2 medium-sized potatoes, boiled and cubed
1/2 cup roasted peanuts, coarsely ground
2 green chilies, finely chopped (adjust to your spice preference)
1 teaspoon cumin seeds
A pinch of asafoetida (hing)
10-12 curry leaves
1/2 teaspoon turmeric powder
1 tablespoon ghee (clarified butter) or oil
Salt to taste
Freshly chopped coriander leaves for garnish

Soaking the Sabudana

Let's start by soaking the sabudana:
Rinse the sabudana thoroughly in cold water until the water runs clear.
In a large bowl, add the rinsed sabudana and pour enough water to cover it completely.
Allow the sabudana to soak for at least 4-5 hours or preferably overnight. The sabudana will absorb water and become soft.
Preparing the Potatoes and Peanuts

While the sabudana is soaking, let's prepare the potatoes and peanuts:
Boil the potatoes until they are tender. Peel and cut them into small cubes. Keep them aside. Dry roast the peanuts until they turn golden and crunchy. Allow them to cool down and then coarsely grind them using a mortar and pestle or a food processor.
