1 cup mixed sprouts (moong beans, chickpeas, black-eyed peas, etc.)
1 small onion (finely chopped)
1 small tomato (finely chopped)
1 cucumber (finely chopped)
1/2 bell pepper (finely chopped)
2 tablespoons tamarind chutney
2 tablespoons green chutney
1/2 teaspoon chaat masala
Fresh coriander leaves for garnish
Salt to taste

Rinse the mixed sprouts thoroughly under cold water and soak them overnight.
Drain the water and transfer the sprouts to a clean cloth. Cover and let them sprout for 1 to 2 days until they are ready to use.
In a large mixing bowl, combine the sprouts, chopped onions, tomatoes, cucumbers, and bell pepper.
Drizzle tamarind chutney and green chutney over the mixture, ensuring it coats the ingredients evenly.
Add chaat masala and salt to taste, and gently toss the chaat to combine all the flavors.
Garnish with fresh coriander leaves for added freshness and serve immediately.
